Ingredients
- 2 sticks unsalted butter (room temperature)
- 3/4 cup sugar, divided
- 1 teaspoon vanilla
- 1/2 cup crushed potato chips (I whirred mine around in a mini food processor)
- 2 cups flour
- 1/2 cup chocolate chips
- Topping: another 2 tablespoons crushed potato chips and 2 teaspoons kosher salt

%3C/p%3E%3Cp%3EThis%20is%20no%20ordinary%20cookie,%20friends.%20Regular%20readers%20will%20know%20how%20much%20I%20heart%20the%20salted%20oatmeal%20cookies%20(I%20link%20back%20to%20that%20post%20about%20a%20gajillion%20times%20a%20week,%20I%20know),%20largely%20because%20of%20their%20near-perfect%20blend%20of%20salty%20and%20sweet.%3C/p%3E%3Cp%3EBut%20we%20may%20have%20discovered%20a%20rival.%3C/p%3E%3Cp%3EI%20tried%20a%20recipe%20for%20potato%20chip%20cookies%20a%20while%20back.%20It%20was%20just%20OK,%20so%20I%20didn't%20bother%20to%20a)%20make%20them%20a%20second%20time%20or%20b)%20feature%20them%20here.%3C/p%3E%3Cp%3EI%20mean,%20come%20on,%20you%20deserve%20a%20lot%20better%20than%20just%20OK.%3C/p%3E%3Cp%3EIn%20searching%20around%20again%20last%20weekend%20for%20a%20new%20cookie%20recipe%20to%20test%20out%20on%20my%20book%20club,%20I%20stumbled%20across%20Smitten%20Kitchen's%20take%20on%20an%20Emeril%20recipe%20for%20potato%20chip%20cookies.%20They%20looked%20nice%20enough%20but%20they%20included%20chopped%20nuts.%3C/p%3E%3Cp%3EI%20don't%20really%20dig%20nuts%20in%20cookies.%3C/p%3E%3Cp%3EThen%20I%20remembered%20that%20the%20just-OK%20recipe%20called%20for%20a%20similar%20amount%20of%20chocolate%20chips.%3C/p%3E%3Cp%3EHellz%20yeah.%3C/p%3E%3Cp%3EResult?%20A%20very%20interesting,%20grown-up%20cookie.%20I'd%20liken%20it%20to%20a%20shortbread:%20crumbly%20without%20being%20too%20crumbly,%20definitely%20not%20soft%20or%20chewy,%20but%20the%20potato%20chips%20give%20it%20a%20little%20extra%20crispiness.%20And%20the%20salty-sweet%20combination%20is%20very,%20very%20good.%3C/p%3E%3Cp%3EIf%20you're%20a%20fan%20of%20the%20salted%20oatmeal%20cookies,%20I'd%20love%20to%20hear%20what%20you%20think%20of%20these,%20should%20you%20decide%20to%20make%20them.%3C/p%3E%3Cp%3EChocolate%20Chip%20Potato%20Chip%20Cookies%20(adapted%20from%20Smitten%20Kitchen,%20Emeril%20Lagasse%20and%20Cuisine%20at%20Home)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Mix%20together%20the%20topping%20ingredients%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20mixer,%20blend%20the%20butter%20and%201/2%20cup%20sugar%20until%20creamy.%20Add%20the%20vanilla%20and%20mix%20until%20smooth.%20Add%20the%20potato%20chips%20and%20flour%20and%20blend%20well.%20Blend%20in%20the%20chocolate%20chips.%3C/p%3E%3Cp%3EScoop%20the%20dough%20out%20in%20approximately%20tablespoon-sized%20clumps%20and%20roll%20them%20into%20small%20balls.%20Roll%20the%20balls%20until%20coated%20in%20the%20remaining%201/4%20cup%20sugar%20in%20a%20small%20bowl.%20Place%20the%20balls%20onto%20parchment-lined%20baking%20sheets%20(they%20can%20be%20pretty%20close%20together).%20Using%20the%20bottom%20of%20a%20drinking%20glass,%20gently%20flatten%20the%20balls%20onto%20the%20sheet.%20Sprinkle%20each%20cookie%20with%20a%20little%20of%20the%20topping.%3C/p%3E%3Cp%3EBake%20for%20about%2015%20minutes%20or%20until%20the%20edges%20are%20lightly%20browned.%20Cool%20completely%20on%20a%20wire%20rack.%3C/p%3E){kind=link}
