  • 1/2 cup long grain white rice
  • 2 teaspoons olive oil
  • 1 cup sliced zucchini
  • 1 tablespoon tomato paste
  • 1 medium onion
  • 2 minced garlic
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon cinnamon powder
  • 1/2 teaspoon black pepper powder (use less if not fond of very spicy food)
  • 1/2 teaspoon cumin powder
