Ingredients

  • 3 c. chicken broth
  • 1 1/2 c. cooked, diced, chicken
  • 1 can (8 3/4 ounces) cream-style corn
  • 1 Tbsp. dry sherry Salt and pepper to taste
  • 1 1/2 Tbsp. cornstarch dissolved in 3 Tbsp. water
  • 1 c. watercress leaves

Directions

  1. In a saucepan over medium heat bring broth to a boil. Add in chicken, corn, sherry, salt and pepper. Simmer 2 to 3 min. Stir in cornstarch mix and cook stirring constantly, 1 to 2 min or possibly till slightly thickened. Stir in watercress and serve immediately.
