  • 450 gm Bramley apples, peeled, cored and thickly sliced (15z)
  • 1 x Lime, juice of
  • 2 Tbsp. Extra virgin olive oil
  • 2 med Onions, thickly sliced
  • 2 x Cloves garlic, finely minced
  • 1 x Red chillies, deseeded and finely (1 to 2) minced
  • 1 tsp Grnd coriander
  • 1 tsp Grnd cumin
  • 450 gm Chicken fillet, cut into 1cm thick strips, 5cm long (15z) Salt and freshly grnd black pepper
  • 2 Tbsp. Freshly minced coriander
  • 8 x Wheat tortillas

Directions

  1. Cut each apple slice in half lengthways, put into a bowl with the lime juice and toss together.
  2. Heat the oil in a large frying pan, add in the onion and cook over a high heat for 2 min, add in the garlic, chillies, the spices and the chicken then fry, stirring for about 5 min till the chicken is golden brown. Lift the chicken out of the pan and set aside.
  3. Add in the apple with the lime juice and 5 Tbsp. of water to the pan and cook with the onions for 3 min. Return the chicken to the pan and continue to cook for 5 min till the apples are tender but still hold their shape. Meanwhile heat the tortillas as directed on the pack, the quickest way is to transfer them to a plate, cover with film and microwave on high for 20-30 seconds.
  4. Season the filling with salt and pepper, then add in the fresh coriander.
  5. To serve, place 2 heaped Tbsp. of the filling in each tortilla, roll up and eat immediately.
  6. NOTES : Delicious tasty fajitas, ideal for a supper or possibly special lunch.
