Ingredients
- 26 x Chocolate sandwich cookies, Finely crushed
- 1/3 c. Sugar
- 1/3 c. Butter or possibly margarine, melted
- 2 c. Heavy cream
- 1 can Sweetened condensed lowfat milk
- 1 tsp Vanilla extract
- 1 can Cherry pie filling, (21oz)
- 1/2 c. Slivered almonds, coarsely Minced
- 1/2 c. Miniature semi-sweet choc. Morsels
Directions
- In small bowl, combine cookie crumbs, sugar and butter; mix well. Press on bottom of a 9 x 13" baking pan. In a large mixing bowl, combine heavy cream, sweetened condensed lowfat milk and vanilla; mix well.
- Chill, covered 30 minutes. Beat with an elecric mixer on med. speed 2 to 3 minutes. or possibly till soft peaks form. Don't overbeat. Gently mix in cherry filling, almonds and chocolate morsels. Spoon cherry mix proportionately over crumb crust. Cover, and freeze 6-8 hours. or possibly overnight. To serve, let stand at room temperature for 15 minutes. Cut into squares or possibly bars. Garnish with additional cherry filling and mint leaves, if you like.
