Ingredients

  • 1 pkt Yellow cake mix
  • 3 x Large eggs
  • 1/2 c. Butter or possibly margarine, melted
  • 1 lrg Peaches, canned, liquid removed
  • 1 pkt Coconut pecan or possibly coconut almond frosting mix, dry
  • 2 c. Lowfat sour cream

Directions

  1. In large bowl, combine dry cake mix, 2 Large eggs, melted butter and dry frosting mix. By hand, stir till all is moistened. Press into 9x13" ungreased pan.
  2. Bake at 350 for 10-15 min, till toothpick in center comes out clean.
  3. Remove from oven. Top with peach slices. In small mixer bowl, combine lowfat sour cream and 1 egg. Pour proportionately over peaches. Return to oven. Bake at 375 for 10-15 min. Cold. Cut into squares. Store leftovers in refrigerator.
