Ingredients
- 2 med Carrots, peeled and grated Coarsely
- 5 sm Parsnips, peeled and grated Coarsely
- 1/4 c. Matzo meal, Or possibly Flour
- 2 lrg Large eggs, beaten
- 1 tsp Chopped chives or possibly scallion
- 1 tsp Minced parsley Salt and pepper to taste Peanut oil for frying
Directions
- Toss the carrots and parsnips with the flour, add in the Large eggs, chives, parsley and salt and pepper to taste. Mix till proportionately moistened.
- Heat 1/4 inch of peanut oil in a saute/fry pan till it is barely smoking. Drop in the batter by Tbsp. and flatten. Fry over medium heat till brown on both sides.
