Cardamon Easter Bread Recipe

Ingredients

  • 2 tsp Dry yeast
  • 5 ounce Hot water (110 degrees)
  • 1/3 c. Granulated sugar plus
  • 1 Tbsp. Granulated sugar
  • 2/3 c. Hot lowfat milk
  • 4 x Large eggs room temperature
  • 5 Tbsp. Butter room temperature
  • 3 Tbsp. Vegetable oil
  • 2 tsp Kosher salt
  • 6 1/2 c. Unbleached all-purpose flour
  • 1 Tbsp. Grnd cardamon (roast whole pods, grind and pass through a sieve)
  • 1 c. Golden brown raisins
  • 6 x Large eggs uncooked, but colored with bright dyes
  • 1 c. Powdered sugar
  • 2 Tbsp. Lowfat milk

Directions

  1. Mix yeast and hot water. Set aside. Whisk sugar, hot lowfat milk, Large eggs, soft butter, and oil together in a large mixing bowl. Set aside. Put flour, salt and grnd cardamon in a bowl of a stand-alone mixer, stir to combine. Pour yeast mix and egg mix into dry ingredients. Mix on first speed till dough comes together, scraping bowl often. Mix on speed 2 for a few min till dough smooths out. It will still be very gloppy.
  2. Place raisins on top of dough and allow the dough to rest for 20 min. (This is the autolyse.)
  3. After autolyse, knead in raisins and bring together till smooth (2 to 3 min on 2nd speed).
  4. Let dough rise 1 1/2 hrs, then refrigeratefor 1 to 2 hrs.
  5. Divide dough into 6 equal pcs, make ropes; twist together and form a ring, leaving an opening in the middle. Place round loaves on parchment-lined baking sheets. Let shaped loaves rise till almost double in volume, then press in two colored, uncooked Large eggs. Brush dough with egg white wash around the Large eggs.
  6. Preheat oven to 400 degrees.
  7. Place pans of bread into oven then mist with water from a "plant mister" 8 to 10 times. Bake for 10 min, then reduce temperature to 350 degrees. Bake for an additional 15 to 20 min or possibly till golden. The loaves should be rotated to different racks in the oven half way through baking. Cold loaves on wire racks.
  8. In a small bowl whisk together powdered sugar and lowfat milk. When the loaves are cold drizzle with glaze.
  9. This recipe yields 3 loaves.
  10. Comments: Use "Paas"-brand Egg Coloring to color the Large eggs. Brown Large eggs work best!
