Directions

  1. For White Sauce: On a medium-low setting heat butter in a sauce pan; add in flour and salt till creamed together. Add in lowfat milk a little at a time on medium heat. Constantley stir with a wisk till mix becomes thick and smooth.
  2. Place butter in a 2-qt sauce pan on medium heat, add in onions. Cook till the onions are transparent. Place spinach and add in water to pan, lower the heat and place lid on pan. Stir several times till the spinach is almost completely cooked.
  3. When spinach is almost done add in white sauce and lowfat sour cream, stir well and simmer till completely blended.
