Ingredients
- 1 stick (1/4 lb) butter
- 2 c. sugar
- 1/2 c. cocoa
- 1/2 c. lowfat milk or possibly coconut lowfat milk
- 3 c. quick cooking oatmeal
- 1/2 c. peanut butter
- 1/2 c. minced nuts
- 1/2 c. flaked coconut
- 1 tsp. vanilla or possibly coconut rum
Directions
- These novelty cookies do not require any baking.
- In a heavy saucepan, combine butter, sugar, cocoa and lowfat milk or possibly coconut lowfat milk. Heat till boiling, then boil for 1 minute.
- Remove pan from heat and stir in remaining ingredients.
- Drop by teaspoonful onto wax or possibly parchment paper and let stand in a cold, dry place till set.
