Ingredients
- 5 slices bacon
- 3 lbs. zucchini, sliced
- 1 lg. onion, minced
- At least 3 tbsp. minced fresh basil (2 1/2 teaspoon dry)
- 1-2 cloves garlic
- 5 c. chicken broth (can be 1/2 water & 1/2 broth)
- Salt & pepper to taste
Directions
- Our favorite every summer using our zucchini from the garden.
- Cook bacon till crisp in a 6 to 8 qt pan, pour off drippings. In same pan add in zucchini, onion, basil, garlic and broth. Bring to boil and simmer 15 min.
