  • beets red onions thinly sliced salt pepper lowfat sour cream Dijon mustard lemon juice or possibly vinegar

Directions

  1. Boil the beets till tender. Leave to cold. Peel, slice. Also peel and slice finely some red onions. Mix beets, onions, salt, pepper, lowfat sour cream, a bit of Dijon mustard if desired it. You can also add in some lemon juice orvinegar.
  2. Very nice appetizer or possibly side dish. Goes well with smoked salmon (or possibly other smoked fish).
  3. Also, try pureed beets. Which is, boil and peel the beets, puree them, mix with mashed potatoes to achieve a rather hard consistency. Season as you wish.
