Basic Chicken Salad Recipe

Sometimes, the most basic recipes are the abosolute best! I get more requests for this recipe. I think people think there is a secret ingredient, but it's simple.

Directions

  1. Simmer chicken in a pot of salted water with celery leaves until it's cooked through.
  2. Dice chicken, being careful to discard any fat.
  3. Finely dice 2 stalks of celery.
  4. Chop about 1/2 the onion, or little more depending on your taste.
  5. Finely chop 3/4 cup of pecans
  6. Toss these ingredients together in a bowl.
  7. Salt and pepper the mixture.
  8. Lastly, generously add Helman's Mayonaise to the mixture and toss more. (I think the mayo is the difference.)
  9. You can add chopped apples and/or chopped grapes. Chopped water chestnuts are also good for crunch. Refrigerate for at least an hour.
