Sometimes, the most basic recipes are the abosolute best! I get more requests for this recipe. I think people think there is a secret ingredient, but it's simple.
Ingredients
- 4 boneless skinless chicken breasts
- 2 stalks of celery with leaves
- 1 small onion
- chopped pecans
- Helman's Mayonaise
- salt
- pepper
Directions
- Simmer chicken in a pot of salted water with celery leaves until it's cooked through.
- Dice chicken, being careful to discard any fat.
- Finely dice 2 stalks of celery.
- Chop about 1/2 the onion, or little more depending on your taste.
- Finely chop 3/4 cup of pecans
- Toss these ingredients together in a bowl.
- Salt and pepper the mixture.
- Lastly, generously add Helman's Mayonaise to the mixture and toss more. (I think the mayo is the difference.)
- You can add chopped apples and/or chopped grapes. Chopped water chestnuts are also good for crunch. Refrigerate for at least an hour.
