- Puree bananas in blender (1 cup). In a medium sized bowl, put together bananas, egg, lowfat milk, and oil. In a large bowl put together pancake mix, nuts and cinnamon. Stir banana mix into dry ingredients till just moistened. Lightly grease and heat a frying pan. For each pancake, pour out 1/4 cup batter. Brown over medium heat till bubbles appear on surface. Turn and brown on other side. Serve with whipped butter and warm maple syrup. Serves 6.
