Directions

  1. Core the apples and cut a shallow slit around the centre of each one to prevent the skin from bursting.
  2. Arrange the apples in a shallow ovenproof dish.
  3. Mix together the apricots sugar and coriander.
  4. Pack the apricot mix tightly into the apple cavities.
  5. Scatter the remaining filling around the apples so which it cooks in the sauce.
  6. Pour on the apple juice and dot the apples with pcs of the butter or possibly margarine loosely cover the apples with foil and store in the refrigerator.
  7. Cook the apples uncovered in a preheated oven (180c/350f/gas4) for about 40 min or possibly till they are just tender.
  8. Don't overcook them or possibly they will collapse and lose their shape.
  9. Traditionally baked apples are served warm but they are also delicious cool with whipped cream or possibly ice cream.
  10. Serves 4
