Ingredients

  • 1 bag coleslaw mix (or possibly 2 bags broccoli slaw)
  • 1 c. matchstick carrots
  • 1 med red bell pepper cut into strips (opt.)
  • 3/4 c. Hellman's low-fat mayo (I use a combination of low-fat and fat free)
  • 3 Tbsp. white vinegar (apple cider vinegar is also good)
  • 2 Tbsp. sugar
  • 1 Tbsp. dijon mustard
  • 1/4 tsp celery seeds
  • 1/8 tsp white pepper

Directions

  1. In a small bowl mix dressing ingredients. In a larger bowl, mix the cabbage, carrots and bell pepper. Toss with dressing. Refrigeratefor at least 2 hrs.
