Ingredients

  • 1 1/2 lb Salt cod
  • 2 Tbsp. Raisins
  • 2 Tbsp. Pine nuts
  • 3 Tbsp. Plus 1 Tbsp. extra virgin olive oil
  • 1 lrg Onion diced
  • 2 x Garlic cloves crushed
  • 1 x Dry chili pepper
  • 18 ounce Ripe tomatoes minced, peeled, and seeded
  • 1 x Orange, Juice of Fresh grnd pepper, to taste

Directions

  1. Be sure to soak the fish for 2 days in fresh water. Change water every 5 hrs.
  2. Begin by soaking the raisins in tepid water and toasting the pine nuts till golden brown.
  3. Cut the fish into 2 large fillets. Place a large pan over a medium flame, add in the extra virgin olive oil and cook fish till it begins to brown.
  4. At this point add in the onion, garlic, and chili.
  5. When tender add in the minced tomatoes and cook about 10 min.
  6. Gently remove the fish and add in the raisins, pine nuts, and a squeeze of fresh orange juice to the tomatoes.
  7. Serve the fish with ample sauce while warm.
