Ingredients
- 1/2 c. Extra virgin olive oil
- 2 x Heads garlic, cloves peeled and minced
- 1 x Onion, minced
- 1/2 c. Flour
- 1 tsp Paprika
- 1/8 tsp Cayenne pepper
- 1 tsp White pepper
- 1/2 tsp Thyme
- 6 c. Chicken broth
- 1/2 x Lemon , juice of
- 1/8 c. Minced cilantro Croutons
Directions
- 6 Servings. Each Serving without croutons
- 1. Heat oil over medium heat in 3-qt saucepan. Add in garlic and onion and saute/fry till barely browned, about 3 min.
- 2. Add in flour, paprika, cayenne, white pepper and thyme, and cook , stirring constantly, 3 min.
- 3. Add in chicken broth and bring to boil over medium high heat, stirring often. Reduce heat to low.
- 4. Using wand process till smooth.
- 5. Add in lemon juice and cilantro and stir well. Simmer on blech. Serve with croutons.
