  • 1/2 c. Butter (1 stick)
  • 3/4 c. Granulated sugar divided
  • 1 x Egg
  • 1/2 tsp Vanilla
  • 1 1/4 c. All-purpose flour
  • 1/8 tsp Salt
  • 1 c. Apricot preserves
  • 2 x Egg whites
  • 1/2 c. Pecan pcs

Directions

  1. Preheat oven to 350 degrees.
  2. Beat butter and 1/4 c. sugar till light. Beat in egg and vanilla.
  3. Combine flour and salt. Gradually add in dry ingredients to the butter mix. Pat into a 9-by-13-inch pan. Cover with apricot preserves.
  4. Beat egg whites till soft peaks form. Gradually add in remaining 1/2 c. sugar. When very stiff, add in pecan pcs. Spread over jam. Bake 35 to 40 min or possibly till hard.
  5. Yield: 24 squares.
  6. Tester's note: Easy to do; an elegant, fancy bar with an excellent taste and texture. I recommend cutting each square in half to make cookies into triangular shapes.
