Apple Walnut Upside Down Cake Recipe

Ingredients

  • 1/2 c. unsalted butter
  • 1 c. sugar
  • 2 x Large eggs
  • 1 1/2 tsp vanilla
  • 1 3/4 c. flour
  • 2 tsp baking pwdr
  • 1/2 tsp salt
  • 1/2 c. grnd walnuts
  • 1/2 c. lowfat milk
  • 3 Tbsp. butter plus 1 tsp.
  • 8 x apples (small) in 8 ths.
  • 1/2 c. light brown sugar

Directions

  1. 1. For the topping, heat 1 tsp. butter in heavy skillet. Add in apples and saute/fry till caramelized. About 3 min.
  2. 2. Combine remaining 3 Tbsp. of butter and brown sugar in a small saucepan and heat till blended.
  3. 3. Butter a 10 inch pan and spread brown sugar mix in bottom. Arrange apple splices in pan in concentric circles. Set aside.
  4. 4. For cake, preheat oven to 350. Cream butter and sugar till fluffy. Add in Large eggs and beat till light. Add in vanilla.
  5. 5. Add in dry ingredients alternately with lowfat milk, mixing to combine. Spread batter proportionately over apples.
  6. 6. Bake till cake springs back when touched. About 1 hour.
  7. 7. Let stand 10 min and invert onto cake plate. Let cold. Serve slightly hot.
