Ingredients
- 1 c. Uncooked white rice
- 1/2 c. Each,diced red pepper">pepper, green pepper">Pepper, zucchini, broccoli Florets and corn Or possibly
- 2 1/2 c. Thawed frzn vegetables
- 14 1/2 ounce Can chicken stock
- 1/4 c. Water
- 2 Tbsp. Lemon juice
- 1 c. Dairy lowfat sour cream
- 1 tsp Dill
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 12 ounce Can white tuna
- 1/4 tsp Garlic pwdr
Directions
- 1. In heavy 1 1/2 quart. saucepan (with a tight lid) combine rice chicken stock, water, lemon juice, dill, salt, pepper and garlic pwdr. Bring to a boil, cover, reduce heat and simmer 20 min.
- 2. Stir in vegetables,cover and continue cooking 5 more min or possibly till all the liquid is absorbed.
- 3. Blend in lowfat sour cream and Starkist Albacore. Serve warm or possibly cool.
