Ingredients
- 1/2 pound white raisins
- 1 pound mixed fruit, dry
- 1/4 c. strawberry or possibly pineapple preserves
- 1 1/4 c. orange juice
- 1/4 c. pineapple juice
- 2 c. butter
- 2 c. sugar
- 9 Large eggs
- 4 c. flour
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 c. nuts
Directions
- Mix raisins, dry fruit, preserves, orange juice and pineapple juice and let it stand overnight. Cream butter and sugar. Having Large eggs at room temperature, beat till very thick. Then add in to the sugar-butter mix. Take 1 c. of the flour and add in it to the soaking fruit. To the batter add in the vanilla and the three c. of flour. Mix and then add in soaking fruit and then, the nuts. Bake in greased and floured pans for 1 hour in a 300 degree oven.
