Directions

  1. Place 3 tablespoons of olive oil in a large pot over medium heat. Place the carrots, celery, and onions in the pot and sauté for 3 minutes. Add the water, and the remaining ingredients.
  2. Continue cooking the soup for 30 minutes, add the salt and pepper, and serve.
  3. If you’re interested in a non-vegan soup, simply add a few cups chopped chicken or beef. You may also use chicken stock in place of water.

    Just finished eating my first bowl of this soup and I quite like it! It's VERY filling which was pretty much why I made it. A couple of things: I make my own veggie stock and used half of that in place of half of the water that was called for. I added some white beans for protein. I added too much pepper (my own fault) and I think I cooked it too long because the veggies don't look very bright. But, I LOVE how it's chock full of veggies! Also, I cannot fathom this recipe only making 6 servings. Wow. It made a TON for me, way more than 6 servings. I'm going to have to freeze some so it won't go bad. Overall, a good recipe! More flavorful than it might seem!
