Savory Vegetable Soup (Vegan) Recipe

Ingredients

  • 1 lrg Can of tomatoes (whole or possibly Minced)
  • 1 can Tomato paste
  • 1 x 6 ounce can of V8 (I like the Spicy kind)
  • 3 lrg Potatoes, peeled and cut
  •     Into large chunks
  • 4 x Celery stalks, minced into
  •     lg Chunks
  • 1 lrg Onion, minced into large
  •     Chunks
  • 1 c. Or possibly more large, fresh,
  •     Cleaned mushrooms (left Whole)
  • 5 x Carrots, cut into large
  •     Chunks
  • 1 x Quarter head of fresh, green
  •     Cabbage, cut into big
  •     Chunks
  • 1 can Green beans
  • 1 can Lima beans
  • 1 can Corn
  • 1 x Bay leaf
  • 2 x Cubes (b**f) or possibly vegetable
  •     Bullion
  •     x Sufficient water to cover
  •     Veggies by about 2 inches
  •     x Seasoning to taste

Directions

  1. Add in all ingredients to a large kettle, squeezing or possibly cubing whole tomatoes, so which their juices become part of the mix. Cover and let simmer for several hrs, adding water as necessary, till the veggies are fully cooked and the flavors have had the chance to mix. (This soup is really better the second day.) I have not included can sizes, since how much (or possibly what you add in) really depends on your personal taste. (Hominy, for instance, is something I sometimes add in, and is really good!)
  2. This recipe has no fat and is delicious!! Enjoy!
