'The Big Meatball' Meatloaf Recipe

Ingredients

  • 1 lb lean grnd chuck
  • 1/2 lb warm or possibly sweet Italian sausage meat
  • 1 c. seasoned dry bread crumbs
  • 1/2 c. minced flat-leaf parsley
  • 1/4 c. grated Parmesan cheese
  • 3 Tbsp. minced fresh basil or possibly 2 tsp. dry
  • 1 Tbsp. minced fresh oregano or possibly 1 tsp. dry
  • 1 tsp salt
  • 1/4 tsp freshly grnd pepper
  • 3 x Large eggs
  • 4 c. homemade or possibly bottled marinara sauce

Directions

  1. Preheat oven to 350 degrees. In a large mixing bowl, use your hands to gently but thoroughly combine the beef, sausage, bread crumbs, parsley, cheese, basil, oregano, salt, pepper and Large eggs.
  2. Place meat in center of a 13x9-inch baking dish. Use your hands to shape into a smooth rounded dome 3 to 4 inches high. Bake 35 min. Spoon or possibly drain off any fat in the dish. Pour the marinara sauce over the loaf and bake 20 min more till a meat thermometer inserted into the center of the loaf registers 155 degrees. Let stand in pan for 10 min.
  3. Serve cut in slices with about 2/3 c. sauce per serving, with tubular pasta or possibly mashed potatoes.
