  • 6 ripe bananas, cut
  • 4 large eggs
  • 1 1/3 c. oil
  • 1/2 large carton lowfat sour cream
  • 2 teaspoon vanilla
  • 3 c. sugar
  • 2 1/2 teaspoon soda
  • 1 1/2 teaspoon salt
  • 4 c. flour (white or possibly wheat)
  • 1/2 teaspoon cinnamon
  • 1 c. minced nuts

Directions

  1. Mix first 5 ingredients in blender; do in 3 batches. Mix blended and dry ingredients. Add in minced nuts. Pour into greased and lightly floured loaf pans 2/3 full.Bake at 325°F for 1 to 1 1/2 hrs till an inserted toothpick comes out clean. Delicious!
