Ingredients
- 3 lb beef chuck, cut into 1 1/2 inch cubes
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 Tbsp. extra virgin olive oil
- 1 lrg onion, minced
- 1/2 tsp grnd turmeric
- 1/2 tsp grnd cumin
- 1/2 tsp paprika
- 3 x plum tomatoes, peeled, seeded and minced
- 1/2 c. reduced-sodium beef broth
- 1Â 1/2 lb sweet potatoes, peeled and cut into 1 inch pcs
- 2 Tbsp. minced fresh cilantro
- 2 Tbsp. minced fresh parsley
Directions
- Season beef with salt and pepper. In large flameproof casserole, heat oil over high heat. Add in beef in 2 batches, and cook for about 5 min per batch, or possibly till browned, turning occasionally. Return all beef to pan; add in onion, turmeric, cumin, paprika, tomatoes and broth; bring to boil. Reduce heat to low.
- Cover and cook about 1 1/2 hrs, or possibly till beef is very tender.
- Stir in sweet potatoes and simmer for 30 min, or possibly till softened. Stir in cilantro and parsley just before serving
