  • 1 pound grnd beef
  • 1/2 c. minced onion
  • 1 (15 ounce.) can tomato sauce
  • 1/2 c. water
  • 1 pkg. taco seasoning mix
  • 1 (12 ounce.) pkg. med. noodles
  • 2 c. sm. curd cottage cheese
  • 1/4 c. lowfat sour cream
  • 1 teaspoon flour
  • 2 teaspoon beef bouillon (granular)
  • 1/4 c. minced green onion
  • 1 c. shredded Mozzarella cheese

Directions

  1. Cook grnd beef and onion till meat is browned, stirring often to crumble meat; drain off drippings. Add in tomato sauce, water and taco seasoning mix; bring to a boil. Reduce heat and simmer 10 min.
  2. Cook noodles according to package and drain. Combine noodles, cottage cheese, lowfat sour cream, flour, bouillon and green onion. Mix well. Spoon noodle mix into a greased 2 1/2 qt casserole. Top with meat mix.
  3. Bake at 350 degrees for 25 min. Sprinkle with Mozzarella cheese and bake 5 min longer or possibly till cheese is melted. Let stand 10 min, then serve.
