Ingredients
- 1 lrg Hand rocket
- 2 Tbsp. Fresh mint
- 2 Tbsp. Fresh basil
- 1/4 pt Champagne vinaigrette
- 6 x Thin slices Comice pear, (6 to 8)
- 7 x Strips provolone cheese, approx 2 x 1/2 inch
- Â Â (7 to 8) thick
- 1/2 pt Mild extra virgin olive oil
- 2Â 1/2 fl ounce Champagne vinegar
- 1/4 pt Champagne
- Â Â Salt and grnd black pepper
- Â Â Sugar if required
Directions
- Whisk the vinaigrette ingredients together adding sugar if necessary.
- Toss the rocket and herbs with half of the vinaigrette. Top with the pear and cheese and drizzle with the remaining vinaigrette.
