.%20%20Using%20the%20tables%20from%20the%20University%20of%20Missouri%20Extension%20site,%20it%20was%20easy%20to%20figure%20out%20the%20correct%20sugar%20to%20water%20ratio,%20along%20with%20the%20proper%20canning%20times.%20%20Our%20cherries%20were%20whole,%20raw,%20and%20in%20a%20mixture%20of%20pint%20and%20quart%20jars.%20%20From%20their%20information%20it%20was%20straight%20forward%20to%20determine%20that%20no%20matter%20which%20sized%20jar,%20the%20processing%20time%20is%2025%20minutes%20for%20my%20elevation.%20%20I%20mention%20this%20site%20as%20a%20resource%20in%20all%20of%20my%20canning%20posts%20and%20really%20do%20use%20it%20myself.%3C/p%3E%3Cp%3ECherry%20and%20apricot%20tart%3C/p%3E%3Cp%3EJudy%20whipped%20up%20some%20fresh%20fruit%20galette%20for%20all%20of%20us%20while%20the%20canning%20prep%20work%20was%20going%20on.%20%20See%20what%20I%20mean%20about%20what%20a%20great%20cook%20she%20is?!%20%20I%20had%20to%20get%20a%20photo%20fast%20because%20the%20tart%20was%20gone%20soon%20after.%20%20We%20were%20able%20to%20put%20up%208%20quarts%20of%20sweet%20cherries,%20with%2012%20cups%20reserved%20for%20the%20Cherry%20Chai%20Butter%20that%20I%20made.%20%20I%20will%20post%20about%20that%20later%20this%20week.%20%20Whether%20you%20are%20working%20alone,%20with%20the%20help%20of%20good%20friends,%20or%20alongside%20your%20sister,%20I%20hope%20you%20try%20canning%20your%20own%20fruit.%20%20You%20can%20do%20it!%3C/p%3E%3Cp%3ESweet%20Cherries%3C/p%3E%3Cp%3ECan%20your%20own%20sweet%20cherries%20for%20those%20holiday%20pies%20and%20treats.%20This%20recipe%20will%20show%20you%20how%20easy%20it%20is.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPrepare%20your%20jars,%20lids,%20rings%20and%20canner.%20If%20you%20are%20new%20to%20water%20bath%20canning,%20or%20it%20has%20been%20a%20while,%20be%20sure%20to%20refresh%20your%20skills%20from%20a%20reliable%20and%20official%20source%20to%20guide%20you%20through%20this%20process.%3C/p%3E%3Cp%3EIn%20a%20large%20pot%20combine%20the%20water%20and%20sugar%20over%20a%20medium%20flame.%20Bring%20up%20to%20a%20boil%20then%20turn%20the%20flame%20down%20to%20simmer%20to%20keep%20your%20syrup%20hot%20throughout%20the%20canning%20process.%3C/p%3E%3Cp%3EPack%20your%20hot%20jars%20with%20the%20cherries.%20Do%20not%20be%20shy%20about%20pushing%20down%20a%20bit%20to%20get%20plenty%20of%20them%20in%20without%20actually%20smashing%20them.%20Pour%20the%20hot%20syrup%20over%20the%20cherries%20leaving%201/2%20inch%20headspace.%20Take%20a%20lot%20of%20time%20removing%20any%20bubbles%20--%20remember%20the%20cherries%20are%20hollow%20so%20they%20need%20to%20be%20jostled%20a%20little%20bit%20to%20get%20all%20the%20air%20out.%20I%20found%20that%20a%20chop%20stick%20worked%20best%20for%20this%20and%20you%20need%20to%20work%20through%20the%20jar%20twice.%20Adjust%20the%20final%20headspace%20back%20to%201/2%20inch%20one%20last%20time.%3C/p%3E%3Cp%3EClean%20the%20rim%20of%20the%20jar%20thoroughly,%20apply%20your%20hot%20lid,%20and%20then%20the%20ring.%20Tighten%20the%20ring%20just%20until%20%22finger%20tip%20tight%22,%20not%20too%20tight,%20but%20not%20loose%20either.%3C/p%3E%3Cp%3EProcess%20you%20jars%20in%20a%20hot%20water%20bath%20for%2025%20minutes%20for%20both%20quart%20or%20pint%20size,%20measuring%20the%20time%20after%20the%20water%20returns%20to%20a%20full%20boil.%20Adjust%20your%20processing%20time%20as%20necessary%20depending%20on%20your%20elevation.%3C/p%3E%3Cp%3ERemove%20your%20jars%20from%20the%20water%20bath%20to%20a%20cloth%20covered%20counter.%20Let%20them%20cool%20completely%20for%2012-24%20hours%20before%20testing%20the%20seals.%20Any%20jars%20that%20do%20not%20seal%20properly%20are%20still%20perfectly%20good%20to%20eat,%20just%20keep%20them%20in%20the%20refrigerator.%3C/p%3E%3Cp%3EStore%20your%20cherries%20in%20a%20cool%20dark%20place.%20These%20cherries%20are%20ready%20to%20eat%20immediately,%20no%20wait%20time%20necessary.%3C/p%3E%3Cp%3EDetails%3C/p%3E%3Cp%3EPrep%20time:%201%20hour%2030%20mins%20Cook%20time:%2026%20mins%20Total%20time:%203%20hour%20Yield:%208%20quarts,%2016%20pints%3C/p%3E%3Cp%3ELast,%20but%20not%20least,%20if%20you%20are%20brand%20new%20to%20water%20bath%20canning%20be%20sure%20to%20follow%20best%20practices%20outlined%20by%20reliable%20sites%20such%20as%20the%20National%20Center%20for%20Home%20Food%20Preservation%20or%20the%20University%20of%20Missouri%20Extension.%20Home%20canning%20is%20something%20anyone%20can%20do!%3C/p%3E){kind=link}
