Ingredients

  • 3/4 lb Boneless skinless chicken breast, cooked and cut into 2 inch cubes
  • 1 c. Celery, diagonally sliced
  • 2/3 c. Snow peas, trimmed
  • 1/3 c. Red bell pepper, seeded and diced
  • 2/3 c. Apples, preferably Gala, unpeeled and diced
  • 2 Tbsp. Vinegar, plus 2 tsp.
  • 2 Tbsp. Canola oil, plus 2 tsp.
  • 1 Tbsp. Sugar, plus 1 tsp.
  • 3/4 tsp Paprika
  • 3/4 tsp Celery seed
  •     Salt and pepper, to taste

Directions

  1. Combine all salad ingredients. Whisk together the dressing ingredients.
  2. Pour the dressing over the salad and serve.
