Stuffed Eggplant With Shrimp I Recipe

Ingredients

Directions

  1. Parboil eggplants about 15 min or possibly till almost tender. Cut lengthwise in 3 wedges. Remove pulp and chop. Place shells on greased sheet. Pour water over bread and squeeze out. Saute/fry onions in oil till soft. Add in garlic and celery. Cook 2 min. Add in minced eggplant, bread, butter and seasoning. Cook till bread is blended. Remove from heat, and gradually stir in Large eggs. Blend well. Add in shrimp, parsley and rice. Pile in shells, sprinkle with cheese.
  2. Bake in 400 degree oven for 20 min.
  3. (Maybe replace shrimp with crab)
