This is something I made while I was in college. Decided to throw some stuff together and serve it to a sorority house for an event our fraternity had with them. The funny thing is, they had no idea it was deer meat. They polished off 3 - 5lbs roasts. Its different, but good.

Ingredients

  • 4-5lbs Roast
  • 2-12oz cans of beer
  • 1 Red Pepper (Diced)
  • 1 Yellow Pepper (Diced)
  • 1 Green Pepper (Diced)
  • 1 medium onion (Diced)
  • 5 cloves of garlic (Minced)
  • 2 Carrot Sticks (Diced)
  • 2 Celery Sticks (Diced)
  • Potatoes for mashing as a side dish
  • When It comes to seasonings, I am not much of a measurer because I am all about seasoning to taste. These are what I put in the mix.
  • Season Salt
  • Ground Pepper
  • Ground Cayenne pepper
  • Garlic Powder
  • Any type of steak seasoning

Directions

  1. You are going to need a big bag for marinating.
  2. 1. Combine all veggies, spices, beer, and roast in big bag (Preferably roasting bag since that is what you will be cooking it in.)
  3. 2. Let sit over night
  4. 3. Preheat oven at 325
  5. 4. Put in oven bag (If not using oven bag for marinating.)
  6. 4. Cook for about 3hr - 3hr 30min (Depending on how you cooked you want you meat.)
  7. 5. Strain liquid from bag
  8. 6. Slice meat to desired size
  9. 7. Put marinade in pot to heat up. Use thickening agent to thicken marinade.
  10. 8. Make some mashed potatoes and use marinade as a gravy or a gravy for the roast.
  11. 9. Enjoy

    Great sounding combo of ingredients! The beer (*anything but 'Light' - I would think a Guinness would really nail it) really tenderizes the meat and adds alot of depth to the dish. Outstanding!

      I never thought of using a thick draught beer like Guiness. The beer I usually use is a good German beer. Something with a strong hoppy bit to it.
