  • 1/3 c. Vegetable oil
  • 1 jar (12 ounce.) thick'n chunky sals
  • 2 x Cloves garlic, chopped
  • 1/3 c. Red wine vinegar
  • 3 c. Cool cooked rice
  • 1 med Cucumber, seeded and minced
  •     Lettuce leaves

Directions

  1. In a medium bowl combine oil, salsa, garlic, and vinegar; stir in rice and cucumber. Refrigeratefor 1 hour. Serve on lettuce line plates.
