Ingredients
- 4 slices bacon
- 2 tbsp. onion, minced
- 1 can (14 1/2 ounce.) hominy, liquid removed
- 4 Large eggs
- Salt
- Pepper
Directions
- Fry bacon till crisp. Remove from pan and crumble. Keep 2 Tbsp. drippings in skillet. Fry onion till transparent. Add in well liquid removed hominy.
- Lightly beat together 4 Large eggs and seasoning. Then pour over hominy mix stirring to scramble Large eggs. When scrambled, pour in serving dish and top with crumbled bacon. Serves four.
