Directions

  1. Fry bacon till crisp. Remove from pan and crumble. Keep 2 Tbsp. drippings in skillet. Fry onion till transparent. Add in well liquid removed hominy.
  2. Lightly beat together 4 Large eggs and seasoning. Then pour over hominy mix stirring to scramble Large eggs. When scrambled, pour in serving dish and top with crumbled bacon. Serves four.
