Ingredients

  • 1 lg. potato (peeled, cubed)
  • 2 tbsp. sugar
  • 2 c. flour

Directions

  1. Place potato cubes in a pan, cover with water and boil till completely done and very soft. Drain and reserve liquid from potatoes, measuring to make 2 c. (add in water if necessary).
  2. Mash potatoes thoroughly, add in the 2 c. potato water. Add in sugar, beat the flour into potato water till smooth. Put into a glass or possibly plastic bowl, cover loosely with aluminum foil, let set in a hot place to ferment. Stir once daily. Allow to ferment 5 to 7 days. Store in refrigerator.
  3. To use, set out the night before. To replenish, add in 1 c. potato water, 1 c. flour, 1 Tbsp. sugar. If starter is not used in 10 days, add in 1 Tbsp. sugar.
