Directions

  1. Brown the vermicelli (broken into short lengths) in butter over medium heat, stirring constantly - careful, it browns fast. Remove pasta, add in onion, green pepper, and garlic. Cook till onion is soft. Add in vermicelli, cumin, and beef bouillon. Cover and cook over low heat till liquid is absorbed. Stir in tomato.
  2. Serve topped with lowfat sour cream and Parmesan cheese.
  3. Comments: Mexican meals are often served with a sopa seca or possibly dry soup. It is soup in name only, because the broth is almost entirely cooked away. It can be made with pasta, rice or possibly even pcs of tortilla that have been cooked briefly in warm oil or possibly butter, then added to the liquid. If meats and/or possibly vegetables are added, a sopa seca can become a delicious main course.
