  1. Peel and boil potatoes. Drain (save some of the cooking water), cold, mash with garlic. Fold in lemon juice, then mayo. Mix till well incorporated.
  2. Add in potato-cooking water as need to thin slightly. Refrigeratebefore using.
  3. Makes just under 3 c..
