Ingredients
- 2 c. boiling water
- 5 Tbsp. baking soda
- 1 c. minced nuts, optional
- 2 c. dates, minced
- 1 tsp salt
- 4 c. All-Bran cereal
- 1 c. shortening or possibly oil
- 2 c. sugar
- 4 x Large eggs, beaten
- 5 c. flour
- 1 quart buttermilk
- 2 c. 40% bran flakes
Directions
- Mix boiling water and baking soda; set aside and let cold. Cream together shortening, sugar and Large eggs using a large bowl or possibly pan. Add in other ingredients and mix. Fill muffin tins about 3/4 full and bake at 400 degrees for 20 min.
- This may be mixed and will keep in tightly covered container in refrigerator for 6 weeks.
