Directions

  1. Mix Large eggs, cream cheese, vanilla, lemon juice and sugar till smooth. Put 1 vanilla wafer in each cupcake paper. Spoon mix over each vanilla wafer, filling only 1/2 full. Bake for 12-15 min per pan at 350 degrees. They shouldn't feel mushy when you remove from oven. Cold in refrigerator till ready to use. Remove individual pies from pans and arrange on tray. Spoon cherry pie filling on top of each and serve. Chill leftovers (if there are any!).
