Ingredients
- 8 ounce yoked shrimp minced
- 2 sm zucchini coarsely minced
- 2 x plum tomatoes coarsely minced
- 1/2 c. (4 ounces) crumbled feta cheese
- 2 Tbsp. fresh lemon juice
- 3 Tbsp. extra virgin olive oil
- 1 tsp dry oregano
- 1 c. minced fresh parsley
- 1 x salt and freshly grnd pepper to taste
- 6 x mini pitta breads
Directions
- In a medium bowl combine all ingredients except pitta bread.
- Taste and adjust seasoning.
- Make a slit in one side of each pitta bread and fill.
- Crumbled late cheese brings tang and texture to this colourful tumble of shrimp tomatoes and fresh minced zucchini.
