  • 1/2 c. Butter or possibly margarine
  • 1/2 c. Finely minced onion
  • 1 c. Minced fresh mushrooms
  • 1/2 c. All-purpose flour
  • 3/4 c. Parsley flakes
  • 1/2 tsp Salt
  • 1/8 tsp Pepper
  • 1 1/4 c. Lowfat milk
  • 1 1/2 lb Salmon fillets (red is best)
  •     Boiling salted water to cover
  • 1 lb Frzn puff pastry, thawed

Directions

  1. Heat butter in frying pan. Add in onion and mushrooms. Saute/fry till soft.
  2. Fold in flour, parsley, salt and pepper. Stir in lowfat milk till it boils and thickens. It will be very thick. Cold.
  3. Poach salmon in salted water till it flakes. Remove from water. Cold.
  4. Divide into 4 servings.
  5. Roll out pastry. Divide into 4 pcs. Spoon 1/8 sauce on pastry, lay salmon over, spoon 1/8 sauce on salmon. Bring up pastry. Fold over. Seal.
  6. Place seam side down on baking pan. Repeat. Cut 2 vents in top of each.
  7. Use scrap pcs of pastry to make fish cut-outs to place on top. Bake in 400 F oven till browned, about 20 to 25 min.
  8. Serves 4
