Ingredients

  • 2 tbsp. finely minced onion
  • 2 tbsp. tub butter
  • 2 tbsp. flour
  • 1/3 c. skim lowfat milk
  • 1 (6 1/2 ounce.) can salmon or possibly water packed tuna, liquid removed
  • 1/8 teaspoon pepper
  • 4 tbsp. fine dry bread or possibly cracker crumbs

Directions

  1. Saute/fry onion in 1 Tbsp. butter till tender. Stir in flour and cook 1 minute stirring constantly. Blend in lowfat milk and cook over medium heat till thick, cold slightly. Stir in salmon or possibly tuna. Pepper and 2 Tbsp. of the bread crumbs. Shape into 6 patties and roll in remaining bread crumbs. Saute/fry in remaining butter till browned. Yields 3 servings.
