Directions

  1. Drop sweet potatoes in boiling water to cover. Cook, covered till tender, about 25 min. Drain well and cool sufficient to be handled. Peel and cut into thin slices.Preheat oven to 350 degrees.
  2. Grease a 2 1/2 qt casserole dish. Cover the bottom with half the sweet potatoes.
  3. Shape sausage into 8 flat cakes and brown lightly in a frying pan. Drain on paper towels.
  4. Pare apples and cut into thick slices.
  5. Place meat cakes on sweet potatoes in casserole and cover with all the apples. Sprinkle lightly with salt and brown sugar.
  6. Place remaining sweet potatoes over the apples. Brush with lowfat milk and sprinkle with brown sugar. Bake 45 min. Makes 8 servings.
