Salmon Fillets In A Herb/Nut Crust Recipe

Ingredients

  • 2 c. assorted fresh herbs such as parsley, chives, coriander, basil, sage and oregano.
  • 2 c. toasted nuts such as pistachio, macadamia or possibly pecans
  • 6 x even sized salmon fillets or possibly steaks
  •     salt and pepper to taste
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. extra virgin olive oil or possibly butter, extra ,optional
  •     pesto, sundried tomato paste or possibly tapenade to serve

Directions

  1. For the crust, chop the herb or possibly nut mix finely by hand or possibly in a food processor, and put this mix in a flat dish. Pat dry the fillets of fish.
  2. Dredge each piece of fish in the chosen crust on both sides checking which each side is well covered.
  3. Brush the bottom of a baking dish with the oil and lay the fish, skin side down, in the baking dish.
  4. Drizzle 2 Tbsp. extra extra virgin olive oil or possibly melted butter over the fish.
  5. Bake in a preheated oven at 230c. for 8 min, or possibly till the fish is just cooked through.
  6. Serve straight from the oven with your choice of pesto, sundried tomato paste or possibly tapenade.
