Directions

  1. Take as many quinces as desired, wipe them well, put in the preserving pan whole and just cover them with water.
  2. Put them on the fire and boil till quinces are soft, test with a skewer.
  3. Remove from fire and break quinces and remove cores, &c., mash with a fork and mix into a liquid again.
  4. Then weigh the pulp and add in 3/4 lb. of sugar for each lb. of pulp.
  5. Put back on the fire again and add in sugar gradually till dissolved, then boil again till for about 45 - 60 min.
