Ingredients

2 lb Stewing beef (Prime round), cut into 1 1/2-inch pcs
2Â 1/2 pt Beef stock
1 lb Small Irish potatoes
1 bn Small carrots
3/4 lb Small onions
2 x Fresh tomatoes
Â Â Assorted spices in a cloth bag, (thyme, bay leaves, garlic, etc.)
Â Â Salt
Â Â Pepper

Directions

In a pot combine meat and stock. Bring to a boil, reduce heat, cover and simmer till meat is tender. Add in vegetables and spices. Cook till vegetables are done, strain off one c. of stock from stew, thicken slightly with beef roux mix (). Pour back into stew and let simmer till ready to serve (about one-half hour).
Yield: 6 servings
