Directions

  1. Heat frying pan with oil. Mix leftover mashed potatoes with liquid removed can of spinach. Add in 1 egg and sufficient matzo meal to make a nice pancake batter. Fry, leave on paper towels 1 minute to get off excess oil. Serve with lowfat sour cream.
