Popovers from a 1931 Stove Cook Book Recipe

Delicious popovers. I add chives to it, a la Jay's Marine Grill, which was a great seafood place in Dallas and closed in the late 50's, I think. They used to pass these out prior to and during dinner.

Directions

  1. Beat the eggs and add the milk. Slowly add the flour and salt that have been sifted together. Beat constantly to prevent lumps. Add the melted butter and chives. Pour into hot, greased popover pans (can use muffin pan) . Bake at 450 degrees for 30 minutes (keep watch if you can). Then Bake at 350 degrees for 15 minutes. Try not to open oven door prior to end of cooking, if can be avoided, or they may fall.
