Ingredients

  • 1/2 c. Creamette Acini di Pepe or possibly Rosamarina, uncooked
  • 1 c. Minced fresh mint leaves
  • 1 c. Minced fresh parsley
  • 3 c. Peeled, seeded and finely minced fresh tomatoes
  • 1/2 c. Sliced green onions
  • 2 Tbsp. Lemon juice
  • 1 Tbsp. Olive or possibly vegetable oil
  • 1 x Clove garlic, chopped

Directions

  1. Prepare Creamette Acini Di Pepe as package directs; drain. Combine all ingredients; mix well. Cover; refrigeratethoroughly. Stir before serving.
  2. Chill leftovers.
